There is a saying that references molasses that goes “slow as molasses in January”. While the origins of this saying date back to the Great Molasses Flood of January 15th of 1919, when over 2.5 million gallons of molasses from a 58 foot tank broke loose and caused a tidal wave of molasses of over 30 feet that tore the steel supports off the nearby elevated train structure. Almost 100 years later, the term is stil used as is molasses. This simple by-product is made from refining sugarcane and/or sugar beets into sugar. The result is a slow pouring sweet syrup that when added to cookies, makes a chewy, sweet and delicious cookie.
